Wheyhey, Apple Pie Waffles

We’re always experimenting in the Wheyhey kitchen to make the perfect waffles, so we can’t wait to share this one with you, created for us by the wonderful Nichola Whitehead

Once you’ve given this batch a go, added with a large dollop of Wheyhey ice cream, we’re sure it’ll be one of your regulars. It’s protein packed, sugar free and absolutely delicious!!

Makes: Approx. 6 waffles (depending on their size!)

Ingredients:
1 medium-large banana, mashed
2 whole eggs
4 egg whites
50g oat flour (rolled oats blended finely)
1/2 tbsp baking powder
1 tsp cinnamon, 1/2 tsp ginger, dash nutmeg, 2 tsp xylitol

Toppings: 1/2 apple (chopped into little pieces), Wheyhey Vanilla Ice-cream & cinnamon/xylitol + 1 calorie spray oil

Method:

1. Whisk together the banana, eggs, egg whites, oat flour and baking powder in a bowl (plus spices & xylitol) until combined

2. Lightly spritz your waffle maker with 1 calorie spray oil (to prevent the waffles from sticking – oats can make this happen!)

3. Pour 1/3 of the mixture (if your waffle maker has room for 2 – or use 1/6 of the mixture for 1 waffle) into the waffle maker, close & cook for 5-6 minutes (the cooking time will reduce as the waffle maker gets hotter)

4. Heat the apple in a microwave for 1 minute & serve the apple on top of 2-3 waffles, before adding your Wheyhey ice-cream, you can add an extra sprinkle of cinnamon/xylitol and enjoy!
