Wheyhey & Peanut Butter Chocolate Lava Cake
With this delicious dessert by our lovely Wheyhey Chef Sam, we are sure you’ll be experimenting in the kitchen to recreate this one! The result, a peanut butter, chocolately, protein packed lava cake. Enjoy!
3.5 tbsp grass-fed butter
85g dark chocolate
1 egg yolk
3 tbsp Xylitol
3/4 tsp vanilla extract
1/4 tsp salt
1 tbsp almond flour
1 tbsp cacao
1 tbsp peanut butter
Wheyhey, to serve
1) Preheat your oven to 200C then grease two ramekins with butter and set aside.
2) Gently melt together the dark chocolate and butter until smooth, then leave to cool slightly. In a mixing bowl, whisk together the egg, yolk and xylitol until frothy, then stir in the vanilla extract.
3) Stir in the dark chocolate and butter mixture, then fold in the salt, cacao and flour. Spoon half the mixture into the two ramekins, then dollop 1/2 tbsp peanut butter into each. Top with the remaining chocolate mix, then place on a baking tray and bake for around 9 minutes.
4) Using a knife, gently loosen the cake around the edges, then tip upside down on a plate. Serve with fresh berries and a huge dollop of Wheyhey.
