Wheyhey Ice Cream Breakfast Tarts
If you’re like us, sometimes all you want is ice cream for breakfast. Actually, quite often!
This delicious recipe is full of protein and combines crunchy granola with creamy, fresh Wheyhey ice cream. It’s also incredibly simple to whip together, meaning your indulgent weekend breakfast is less than half an hour away.
Ingredients: (Serves 2)
3/4 cup granola
1 tbsp melted coconut oil
1 small tub strawberry Wheyhey
Berries and dark chocolate, to decorate
1) Preheat the oven to 180C. In a high powered blender, whizz the granola and coconut oil together until sticking together, then press down the mixture into mini loose-bottomed tart tins, ensuring you press it up the sides. Bake in the oven for 8 minutes.
2) Leave the tart to cool completely before removing it out of the case, then take the ice cream from the freezer to soften slightly. Scoop out the ice cream and place in the cooled tart tins, then top with berries and melted chocolate to decorate.
