Raw Wheyhey Summer Berry Cheesecake

Take a look at this refreshing and healthy recipe to cool down with this summer, created by the talented Protein Chef!

The Protein Chef’s Summer Berry Cheesecake can be eaten day or night and we are sure that it would go down a treat with friends and family!

(Or slice it into portions like this and keep it all for yourself! It is healthy after all )

Ingredients

For the base:

10g Goji berries
20g Raisins
10g Almonds
10g Brazil nuts
20g Natural peanut butter

For the cheesecake:

1 small tub of Wheyhey vanilla
1 small tub of Wheyhey strawberry
2 tsp sugar free fruit jam
50g frozen berries

Method:

1 – Blend the goji berries, raisins, almonds & Brazil nuts in a food processor.
2 – Add this mixture to the peanut butter and mix well.
3 – Line a mini loaf tin with cling film and press the base mixture in and press down.
4 – Tip in the vanilla Wheyhey and level out.
5 – Tip the strawberry Wheyhey on top and level out.
6 – Put this in the freezer for at least 2-3 hours to firm up.
7 – Spread the sugar free jam on top follow by the frozen berries.
8 – Remove from the tin, take off the cling film and enjoy!
