Wheyhey Banoffee, Chocolate & Pecan Slices

If there are some things you should definitely try with a Wheyhey, let it be nuts, chocolate & bananas!

This layered iced dessert is a wonderful treat made from healthy ingredients and packed full of protein and good fats. This can be made in advance and served at the last minute straight from the freezer and topped with bananas. Enjoy!

Chocolate ganache –
2 avocados
6 tbsp cocoa powder
6 tbsp natural sweetener
1 tsp vanilla extract
2 tbsp unsweetened almond milk

Banoffee layer –
1 large ripe banana
4 tbsp pecan nut butter (I used Nutural World)
2 small tubs Wheyhey Banoffee protein ice cream
1 tsp vanilla extract

Banana topping –
1-2 bananas, sliced
2 tsp coconut oil
2 tsp stevia

Get making!
1. First of all, prepare your layers. For the chocolate ganache, put all of the ingredients into a blender and whizz up until completely smooth. Transfer to a bowl.
2. Put the ingredients for the banoffee layer in the blender and whizz until smooth.
3. Heat the coconut oil in a pan and gently fry, stirring quickly as you sprinkle the natural sweetener into the pan. Cook for a couple of minutes until golden, then leave to cool.
4. Spoon banana slices into a silicone loaf mold, making sure it covers the base. Now spoon in the chocolate layer, smoothing out evenly – it should fill up about a third.
5. Pour over the banoffee mixture (this will be quite runny but don’t worry!), then transfer to the freezer and freeze for at least 6 hours.

Ready to serve: Remove the loaf from the freezer about 10 minutes beforehand so it’s easier to cut into slices, and tip out onto a plate. Then slice up and enjoy!
